Stillbound is a Colorado-based luxury spirits house built on a simple belief: the best moments aren’t rushed.
In a culture optimized for speed and novelty, we set out to create American apple spirits meant for a different pace, one defined by presence, patience, and shared time. Stillbound exists for the quiet hour of the evening, when conversation slows, the setting matters, and the pour is intentional.
Our spirits are not designed for spectacle or excess. They are made to be returned to, remembered, and shared.
Our Origin
Stillbound began with a frustration and a question.
Modern drinking culture offered plenty of options for intensity, but very few for composure. Whiskey felt too heavy for some moments. Wine felt too casual for others. We wanted something that belonged in the space between: serious, grounded, and unhurried.
Apple spirits provided the answer.
Rooted in American agricultural tradition but largely overlooked in modern spirits culture, apple-based expressions offered depth without aggression and structure without burn. From that starting point, Stillbound was founded to reimagine pommeau and American brandy as true slow-sip spirits—worthy of the same respect, design, and ritual as the finest evening pours.
Our Craft
Stillbound spirits are made from heirloom apples and shaped by time.
We blend apple wine and apple brandy to create our pommeau, aging it in oak for a minimum of two years to develop warmth, balance, and integration. Our brandy is aged for five years before release, with additional inventory continuing to mature for future expressions.
Altitude aging plays a quiet but meaningful role. Cooler temperatures and longer seasonal cycles slow extraction, allowing flavors to evolve with restraint rather than force. Oak is used for structure and depth, not dominance.
We do not rush releases. Bottling happens when the spirit is ready—not when a calendar demands it.
What Makes Stillbound Different
Stillbound is not a cider, a novelty spirit, or a seasonal indulgence.
We position pommeau and brandy as evening spirits—meant to sit comfortably alongside whiskey, cognac, and fine wine. Our bottles are designed to belong on premium back bars, in thoughtful homes, and in moments where presence matters more than performance.
We do not chase trends, engage in discounting, or pursue rapid expansion. Production is intentionally limited. Distribution is selective. Growth follows readiness, not hype.
Time is our differentiator.
