Stillbound spirits are not complicated. They do not require recipes, mixers, or performance. They require only intention, a proper glass, and the willingness to slow down.

Stillbound Pommeau
Aged 2 Years | 16% ABV
The Glass:
Serve in a wine glass or rocks glass. The wider bowl allows the apple and oak to open gently. If you prefer it chilled, use a single large ice cube. Never crushed ice, which dilutes too quickly.
The Pour:
3 ounces. Neat or over ice. No mixers, no sugar, no garnish.
The Moment:
Pommeau is for evenings that call for warmth without consequence. It sits between wine and whiskey, offering depth and composure without burn. Pour it when the day is done, conversation is settling in, and you want something that rewards presence, not intensity.
Temperature:
Room temperature reveals the full oak and caramel character. Chilled emphasizes the apple and makes it more refreshing. Both are correct. Choose based on the season and the mood.
Pairing:
Cheese, charcuterie, dark chocolate, or nothing at all. Pommeau does not need accompaniment to justify itself.
Stillbound Brandy
Aged 5 Years | 40% ABV
The Glass:
Serve in a tulip-shaped tasting glass (Glencairn or similar). The narrow opening concentrates the aroma, allowing the oak, fruit, and barrel character to present themselves fully.
The Pour:
2 ounces. Always neat. Brandy at this proof does not need dilution. It has already been shaped by five years in oak.
The Moment:
Brandy is for moments that reward patience. It offers backbone without bite, structure without sharpness. Pour it when the evening has fully settled, when conversation has moved past small talk, and when you want a spirit that lingers without demanding attention.
Temperature:
Room temperature, always. Chilling mutes the complexity that time and oak have built. Let it breathe for a moment in the glass before the first sip.
Pairing:
Cigars, aged cheese, nuts, or solitude. Brandy is equally at home in conversation and in quiet reflection.
When to Pour
Stillbound is not an anytime drink. It is designed for specific moments:
